What is pide?
Short answer
Pide is a Turkish flatbread family. In a döner shop it usually means the round or oval loaf that is cut and often toasted to hold meat and salad — not automatically the boat-shaped pide baked with toppings.
Pide is a Turkish word for flatbread, and it covers more than one bake. The loaf a döner shop cuts into a sandwich is not the same object as the boat-shaped pide topped with cheese or meat and served as its own meal.
In German döner service, pide (or Fladenbrot) is usually a round or oval wheat bread, sometimes sesame-topped, quartered, and warmed or pressed so it can hold shaved meat, salad, and sauce. Döner Haus’s August 2026 East Village menu describes crispy Turkish pide for the sandwich. Other operators use different branded loaves and still call the result a kebab sandwich.

Pressed pide on a contact grill is the German-style crunch many US shops copy. Fresh, untoasted pide is still correct bread. Neither version is a gyro pita. Ask to see the bread if the English menu only says “flatbread.” Thickness and a seed crust are the tells. A boat pide with egg is dinner, not a sandwich carrier; do not order it expecting döner.
