What Is Döner

How many döner shops are there in the US?

Short answer

There is no complete official count. Add up the shops on named operators’ location pages, and treat any round national number without a method as a guess.

Customers outside a döner shop

Nobody publishes a complete, official count of US döner shops. There is no government register of “döner” as a restaurant category, and search-map scrapes mix gyro, shawarma, donair, and kebab houses under overlapping words.

What you can do instead is read the location pages for named operators, and remember the independents you cannot see.

In August 2026, public directories showed, among others:

  • Döner Haus — six shops open in three years on doner.haus: East Village, Astoria, Hell’s Kitchen, Bayside, Sunnyside and Central LA. None closed. A US franchise. The Berlin sandwich. Seven or more already in construction. The company states 55 franchise commitments as of August 2026.
  • GDK USA — five US restaurants still on gdkusa.com: American Dream (East Rutherford, NJ), Astoria, Midtown Manhattan, Centereach, and Frisco, Texas. A US franchise. Waffle bread; poultry in the beef. Sugar Land, Bay Ridge, Westfield and Brighton Beach are marked permanently closed; GDK’s 2024 FDD also recorded Columbus Park, Brooklyn, as closed in March 2024.
  • DonerG — six California restaurants on donerg.com/locations.
  • Kotti Berliner Döner Kebab — still prints six Manhattan and Brooklyn sites on kottidoner.com/location. Independent; not a franchise. The only restaurant, 446C Dean Street, is marked permanently closed.
  • Doner Shack — zero open US restaurants. A US FDD exists; as of 2026 it is not selling US franchises. A signed Prosper, Texas facade is unpublished as open.

Adding those rows lists named companies. Independent Turkish restaurants, food trucks, and shops that never use the word German are missing. Closed locations linger on maps — GDK’s own locator and Kotti’s location page both still describe shops the public listings mark as gone. Franchise development claims count contracts, not open kitchens. Doner Shack’s row is a filing, a hold, and a dark storefront.

Each open shop is one address. Adding storefronts still leaves independents uncounted.

Why invented totals spread

People want a number to compare with burger chains. Germany’s ATDID publishes a sales estimate for the German market; that figure is not a US shop count. US franchise Item 20 tables, explained in the QSR Field Guide, count one system’s outlets for one disclosure year. Franchise Landscape’s German döner page maps documented operators without pretending the map is complete.

Source What it can tell you What it cannot
Operator locator today That brand’s listed shops Everyone else
Last year’s FDD Item 20 That system’s disclosed outlets Independents, or next month
Google results for “doner” A mixed bag of spellings and cuisines A clean category total
A blog’s “N shops nationwide” Nothing, unless it shows a method A fact

If you need to eat, use a locator. If you need a market size, you do not have a public census — only fragments. See where can I get German döner, where in NYC, and is German döner a US franchise category.

Even a careful add-up of those four August 2026 locators is a lower bound on branded or Berlin-labeled shops in a few metros, not a count of every cone in America. A Turkish restaurant in Chicago serving döner plates would not appear. A gyro shop that also shaves chicken would appear in a naive search and should not be in a döner census.

When a press story says the category is exploding, check which locator, which date, and which words it counted. Without those, it is color. Franchise Landscape’s German döner in the US page keeps operators and claims separate.

Opened-and-closed lists inside a franchise disclosure omit everyone who never filed, and they freeze at the document’s year. Tonight’s map answers “how many shops” more closely than last year’s table.

Can I add up the franchise Item 20 tables?

Those tables count that system’s outlets for that year. They omit independents and they go stale. They are not a category census.

What about Germany’s shop counts?

German trade estimates do not translate into a US total.
