What Is Döner

FAQ

Short answer

One-line answers on German döner, gyro, shawarma, halal, gluten, and bread.

Sandwiches, wraps, boxes and fries laid out together

What is it? A German döner is the Berlin-style version of the Turkish döner kebab: seasoned meat stacked on a vertical rotisserie, shaved thin, and served in toasted flatbread with crisp vegetables and sauces.

What does döner mean? To turn. The meat rotates on a vertical spit. Döner kebab means rotating roasted meat.

Where did it come from? The Berlin format developed among Turkish immigrant entrepreneurs around the early 1970s. The turning-spit method and bread-served döner existed earlier in Turkey, and the identity of a single inventor is disputed.

Gyro? No. Greek gyro commonly uses soft pita and tzatziki; German döner commonly uses cut or toasted flatbread, more salad, and garlic, herb, or chili sauces.

Shawarma? No. Levantine shawarma commonly uses aromatic spices, pickles, tahini, or toum. The ingredients overlap, but the menu traditions differ.

Which came first? Ottoman layered spit-roasting and Turkish döner predate Berlin’s sandwich. Shawarma and gyro developed through related regional traditions.

Turkish? Turkish in culinary roots and German in its Berlin development. It belongs to Turkish-German history.

Kebab? Döner is a kebab. Kebab is not always döner.

Meat? Beef, veal, lamb, chicken, turkey, and mixtures all appear. Ask for the species, formulation, and allergens.

Halal? It can be. Ask what product or location a current certificate covers and whether the kitchen handles non-halal food.

Gluten-free meat? Only when its ingredients and handling support that claim. Conventional bread contains wheat, and a box still requires a cross-contact check.

Bread? Often cut pide or fladenbrot; dürüm wraps are common too. Operators use different recipes and names.

Sauces? Garlic, yogurt, herb, and chili sauces are common, but ingredients and defaults vary by shop.

Box? Same fillings on fries, salad, or rice.

Healthy? It can combine protein, vegetables, and grain, but portion, meat composition, bread, sauce, cheese, and fries determine the meal.

How do you eat it? Keep the sandwich partly wrapped and use both hands. Standing takeaway is common; seated shops and plated döner are normal too.

Vegetarian? Some shops offer falafel, halloumi, vegetables, or plant-based patties. Check sauce, bread, and shared equipment.

Calories? There is no category-wide count. Use current nutrition for the exact operator, location, item, meat, and sauces.

Spicy? Not by default. Chili is usually on request. The meat is seasoned, not chili-rubbed.

Where in the US? As of August 2026, official directories list Döner Haus in New York City, GDK in New York, New Jersey, and Texas, and DonerG in Southern California.

Imbiss? A German snack bar or stand for quick food. It may be a window, kiosk, or small shop with limited seating.

What the shop looks like

A small counter. A long line.

Counter service and takeaway can support a compact room, but shop size, equipment, staffing, hours, and seating vary by operator and location.

A street-facing storefront can combine a compact counter with direct takeaway access.

Standing, queueing, eating on the way somewhere.

Why are some shops small? Counter service and takeaway reduce dining-room needs. That is an operating choice, not a test of authenticity.

Where should I start? Use a dated official location directory, then read that location’s menu. This FAQ is a summary; each linked answer gives the qualifications and sources.
