# Is the meat gluten-free?

Sometimes, but never assume. Plain cuts of beef, lamb, or chicken do not naturally contain gluten; a prepared döner cone can include marinades, seasonings, binders, or other ingredients that do. Preparation can also introduce cross-contact.

Germany’s [official food-control guidance](https://www.lgl.bayern.de/downloads/lebensmittel/doc/merkblatt_doener_kebab.pdf) is a useful example of why names matter: it describes guideline-compliant döner and separately shows products containing breadcrumbs or soy protein that require more specific labeling there. US menus do not necessarily follow those naming conventions.

An operator claim is narrower than a category rule. In August 2026, [Döner Haus’s public site](https://doner.haus/) described its meats as filler-free and gluten-free. GDK’s current [allergen notice](https://germandonerkebab.com/ie/allergen-information), by contrast, says gluten and milk are present in its operation and warns that it cannot guarantee allergen-free food because of cross-contact. Regional recipes vary, so neither statement answers for another shop.

## Practical takeaway

For preference rather than medical necessity, a salad or rice box may remove the obvious bread. For celiac disease or an allergy, ask the restaurant for current written ingredients and its cross-contact procedure.
